HERE S The way to ASSEMBLE:

Roughly layer the lamb chops with the potatoes.
Poke the garlic cloves between the lamb and potatoes.
Sprinkle with fresh or dried rosemary and oregano, salt and pepper.
Pour wine and water down either side so as not to wash from the seasoning.
Scatter chopped tomatoes or tomato puree over lamb and potatoes.
Finish using a handful of grated pecorino cheese sprinkled over.
Scatter with breadcrumbs to absorb any excess liquid.

Cover baking dish with foil and bake for approximately an hour at 200 Celcius. Remove foil for the rest of the cooking and bake until things are tender, probably another hour.

And that s about as simple as it gets.
